- 3 eggs
- 1 c. sugar
- 2/3 c. canned pumpkin
- 3/4 c. flour
- 1 tsp. baking soda
- 4 Tbsp. softened margarine
- 1 c. powdered sugar
- 1/2 tsp. vanilla
- 1/2 c. chopped walnuts (optional)
Directions

1Cream eggs and 1 cup sugar.

2Add 2/3 cup canned pumpkin, 3/4 cup flour and 1 teaspoon baking soda; beat.

3Grease and flour jelly roll pan, then pour batter in and bake at 350° for 15 minutes.

4Let cool for 10 minutes.

5Flip out of pan and roll in dish towel; let stand for 45 minutes.

6Mix 8 ounces cream cheese, 4 tablespoons softened margarine, 1 cup powdered sugar and 1/2 teaspoon vanilla.

7Add walnuts now if desired.

8Unroll and spread with cream cheese mixture.

9Roll into aluminum foil.

10Refrigerate.
