- 2 c. flour (plain or cake)
- 2 c. sugar
- 1 1/2 c. Wesson or corn oil
- 3 c. finely grated carrots
- 4 eggs
- 2 tsp. soda
- 2 tsp. cinnamon
Directions

1Combine oil and sugar; mix well.

2Mix half dry ingredients into sugar mixture; blend.

3Add remaining dry ingredients alternately with eggs, one at a time, mixing well after each addition.

4Add carrots; mix well.

5Pour into lightly oiled or greased with shortening, then floured pans (three pans 7 x 11-inch).

6Bake in 350° oven for about 40 minutes.

7Cool.

8Frost with Cream Cheese Frosting.
