  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 2 c. grated raw carrots
  • 1 (8 1/2 oz.) can crushed pineapple (about 3/4 c.)
  • 1 c. chopped pecans
  • 4 eggs
  • 2 c. sugar
  • 1 1/4 c. light salad oil
  • 1/2 c. flaked coconut

    Prepare carrots, pineapple and pecans.
