- 2 c. self-rising flour
- 2 c. sugar
- 1 1/2 c. Wesson oil
- 2 tsp. cinnamon
- 3 jars Junior baby food carrots or 3 c. grated carrots
- 4 large eggs
- 1/2 c. pecans
Directions

1Mix dry ingredients, then add cooking oil and stir well.

2Add eggs, one at a time.

3Stir well after each.

4Add carrots and nuts. Bake in 3 (8-inch) pans at 350° for 25 or 30 minutes.

5The baby food makes this cake very moist.

6Cool and frost with Cream Cheese Icing.

7Spread between each layer.

8Spread the rest on top and sides.
