  • 2 c. grated carrots
  • 1 c. oil
  • 1 1/2 tsp. baking soda
  • 2 c. sugar
  • 4 eggs
  • 2 c. flour
  • 1 c. drained crushed pineapple
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 3/4 c. chopped walnuts

    Measure all dry ingredients and mix.

    Add oil and eggs and beat together with dry ingredients.

    Add carrots, nuts and pineapple.
