Ingredients

  • 3 c. sifted flour
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 1 1/2 tsp. soda
  • 1 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 (8 oz.) can crushed pineapple, drained
  • 3 eggs, beaten
  • 1 1/2 c. salad oil
  • 2 tsp. vanilla
  • 2 c. grated carrots
  • 1 1/2 c. broken pecans

    Combine first 6 ingredients.

    Make well in center; add syrup from pineapple, oil, beaten eggs and vanilla.

    Blend.

    Add pineapple, carrots and nuts.

    Pour into oiled 10-inch tube pan. Bake 1 1/2 hours at 350° or until done.
