  • 2 c. grated carrots
  • 1/2 c. grated pineapple
  • 1/2 c. grated apples
  • 3 c. flour
  • 1 Tbsp. cinnamon
  • 4 eggs
  • 1 c. honey
  • 1/2 tsp. nutmeg
  • 1 Tbsp. baking soda
  • 1 Tbsp. vanilla extract
  • 1 c. coconut
  • 1 3/4 c. pecans or other nuts
  • 1 c. canola oil

Directions

    Mix well carrots, pineapple, apple, honey, oil, coconut and vanilla.

    Add eggs and dry ingredients, continuing to mix.

    Add nuts and mix well.

    Bake in a well-greased and floured tube-type pan at 350° for 1 hour.
