- 2 c. sifted flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 1/4 c. oil
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 4 eggs
- 2 c. shredded carrot
- 1/2 c. chopped nuts
- 1 (8 1/2 oz.) can crushed pineapple, drained
- 1 c. flaked coconut
Directions

1Sift dry ingredients into a large bowl.

2Add sugar, oil and eggs.

3Beat 1 minute with electric mixer.

4Add carrots, pineapple, nuts and coconut.

5Mix and pour into a 13 x 9-inch pan.

6Bake at 350° for 35 to 40 minutes.
