  • 2 c. grated carrots
  • 2 c. sugar
  • 1 1/2 c. vegetable oil
  • 2 c. flour
  • 4 eggs
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. chopped walnuts
  • 1 tsp. cinnamon

    Grease and flour a tube pan.

    Mix sugar, oil and eggs.

    Sift baking powder, cinnamon, flour, soda and salt.

    Add to sugar, oil and egg mixture.

    Add carrots and walnuts.

    Pour in pan and bake at 350° for 1 hour.
