Ingredients

  • 2 c. Keebler graham crackers
  • 1/2 c. unbleached flour
  • 1/2 c. brown Sugar Twin
  • 1 tsp. baking soda
  • 8 oz. plain yogurt
  • 1/2 c. applesauce (no sugar added)
  • 4 Tbsp. nuts
  • 1/2 tsp. nutmeg
  • 1 dash salt
  • 1 1/2 tsp. cinnamon
  • 2 pkg. Sweet 'N Low
  • 1 tsp. baking powder
  • 1 egg, beaten
  • 1/4 c. oil
  • 2 large carrots, pared and shredded
  • 1/2 tsp. cloves, crushed
  • 1 tsp. vanilla

Directions

    Combine all ingredients and place in a 9-inch cake pan sprayed with Pam.

    Bake at 350° for 25 to 30 minutes or until done.

    Let cool and spread on Cream Cheese Frosting.
