Ingredients
- 3/4 cup light brown sugar,firmly packed
- 3/4 cup golden syrup
- 3 oz. butter, softened
- 1 tbsp. ground ginger
- 1 tsp. ground cinnamon
- 1 tsp. ginger, fresh grated
- 1 tbsp. bicarbonate of soda
- 1 lb. all purpose flour
- 1 dash salt
- 2 eggs, beaten
Directions

1Combine sugar, golden syrup, butter, spices and fresh ginger in a heavy- pan over low heat, and let melt, stirring.

2Remove from heat for two minutes, and stir in bicarbonate of soda until light and fluffy.

3Sift flour and salt into a large mixing bowl.

4Make a well in the centre, add eggs and gradually add the syrup, stirring until all flour is incorporated and you have a dough.

5Wrap dough in plastic and chill for an hour.

6Heat oven to 350F, and roll out dough thinly on a floured surface.

7Cut into shapes, and place on trays lined with baking paper.

8Bake for ten minutes.

9Remove from oven and let cool for five minutes before removing from tray.

10Cool on a wire rack.
