- 1 1/2 c. sugar
- 1 c. vegetable oil
- 3 large eggs
- 2 c. all-purpose flour
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1/2 tsp. salt
- 3 c. shredded carrots (5 medium)
- 1 c. coarsely chopped nuts
- Cream Cheese Frosting
Directions

1Heat oven to 350°.

2Grease bottom and sides of rectangular pan, 13 x 9 x 2-inches or 2 round pans, 8 x 1 1/2 or 9 x 1 1/2-inches with shortening; lightly flour.

3Beat sugar, oil and eggs in large bowl on low speed about 30 seconds.

4Add remaining ingredients except carrots, nuts and Cream Cheese Frosting.

5Beat on low speed 1 minute.

6Stir in carrots and nuts.

7Pour in pan.

8Bake in rectangular pan 40 or 45 minutes until toothpick comes out clean. Cool 10 minutes or completely.

9Frost with Cream Cheese Frosting; covered in refrigerator.
