- 1 1/2 c. vegetable oil
- 2 c. shredded carrots
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 1 c. chopped nuts (optional)
- 2 c. self-rising flour
Directions

1With mixer, blend eggs and sugar together.

2Blend in oil about 2 minutes on medium speed.

3Add all other ingredients and mix well.

4Pour into 9 x 13-inch pan.

5Bake in preheated oven at 350° for 1 hour.
