- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 4 eggs
- 2 c. sugar
- 3/4 c. oil
- 2 c. shredded raw carrots
- 8 oz. can crushed pineapple, drained
- 1/2 c. flaked coconut
- 1/2 c. chopped walnuts
Directions

1Sift flour, baking powder, baking soda and spices; set aside. In large bowl, beat eggs slightly.

2Gradually beat in sugar until it's thick.

3Gradually stir in oil.

4Add flour mix and other ingredients and stir well.

5Bake at 350° for 40 minutes.
