- 1 c. butter or margarine
- 2 c. sugar
- 2 c. self-rising flour
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 3 eggs, separated
- 2 1/2 Tbsp. hot water
- 1 1/2 c. shredded carrots
- 2 c. chopped nuts
Directions

1Cream butter and sugar until light and fluffy.

2Sift dry ingredients; add egg yolks and water.

3Add to creamed mixture. Add carrots and nuts.

4Fold in stiffly beaten egg whites.

5Bake in 2 (9-inch) pans for about 30 minutes.

6Frost with Cream Cheese Frosting.
