  • 3 Eggs.
  • 1 Cup caster sugar.
  • 3/4 Cup cooing oil(veg).
  • 2 Teaspoons cinnamon.
  • 2 Cups grated carrot.
  • 1 Teaspoon bi-carbonate of soda.
  • 1 Teaspoon baking powder.
  • 1 Lemon.
  • 1/2 Cup of pecan kernels.
  • 1 1/3 Cups of plane flour.
  • Cream cheese.

Directions

    1 Beat eggs and sugar until frothy.

    2. Add oil and cinnamon.

    3. Grate carrot add to mixture.

    4. Add sifted flour,bi-carbonate of soda and baking powder.

    5. Mix well pour into cake tin.

    6. Bake in a hot oven(180 degrees)for 1 hour.

    7. When the cake is cool add lemon juice to cream cheese mix well.

    8. Spread cheese on the of cake and decorate with pecans.
