- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 1 tsp. salt
- 2 c. sifted flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 3 c. grated raw carrots
- 1 c. chopped pecans
- 1/2 c. drained crushed pineapple
- 1/2 c. frozen coconut
Directions

1Combine oil and sugar; mix well.

2Sift together dry ingredients.

3Stir in half of dry ingredients into sugar mixture and blend well.

4Stir in remaining dry ingredients alternately with eggs one at a time, mixing well after each addition.

5Add carrots; mix well.

6Add pecans and mix well.

7Add pineapple and coconut. Pour into lightly oiled pans.

8Bake in 300° oven for 1 hour.
