Carrot Cake

  • 4 eggs
  • 3/4 c. Wesson oil only
  • 1/2 tsp. soda
  • 1 tsp. vanilla
  • 3 c. grated carrots
  • 2 c. sugar
  • 2 c. self-rising flour
  • 2 tsp. cinnamon

Directions

    Mix eggs, sugar and oil until creamy (will not get fluffy; will still have sugar crystals); add flour, soda, cinnamon and vanilla.

    Beat.

    Add carrots and mix.

    (I add about 1 cup of nuts to my batter; but that is optional.)

    Bake 30 to 40 minutes; cool and ice.
