- 4 eggs
- 3/4 c. Wesson oil only
- 1/2 tsp. soda
- 1 tsp. vanilla
- 3 c. grated carrots
- 2 c. sugar
- 2 c. self-rising flour
- 2 tsp. cinnamon
Directions

1Mix eggs, sugar and oil until creamy (will not get fluffy; will still have sugar crystals); add flour, soda, cinnamon and vanilla.

2Beat.

3Add carrots and mix.

4(I add about 1 cup of nuts to my batter; but that is optional.)

5Bake 30 to 40 minutes; cool and ice.
