- 1 (20 ounce) can crushed pineapple
- 2 cups sugar
- 1 12 cups cooking oil
- 4 eggs
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 14 teaspoons nutmeg
- 1 teaspoon salt
- 3 cups grated carrots
- 1 cup chopped nuts (walnut or pecan)
Directions

1Heat oven to 350.

2grease and flour pans.

3Drain pineapple (reserving half the juice).

4In large bowl cream sugar and oil, beat in eggs, add dry ingredients and mix well.

5Fold in pineapple, reserved juice, carrots and nuts.

6Pour batter into pans (3 pans 8 or 9 inches in diameter).

7bake 20-40 minutes.

8frost with Cream Cheese Frosting.
