  • 2 1/2 c. flour (self-rising)
  • 3/4 c. brown sugar
  • 3/4 c. white sugar
  • 1 Tbsp. vanilla
  • 1 c. walnuts
  • 1/2 stick butter
  • 1 c. grated carrots
  • 3 eggs

Directions

    Cream sugars, butter and eggs.

    Mix in a little flour at a time.

    Add vanilla.

    Mix well.

    Add carrots and walnuts last. Bake in greased, floured pan at 350° for 1 hour or until toothpick inserted in center comes out clean.

    Serve plain or add your favorite frosting.
