- 1 1/2 tsp. soda
- 1 tsp. salt
- 2 c. sugar
- 2 grated carrots
- 1/2 c. chopped pecans
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 4 eggs
- 1 1/2 c. oil
- 1 small can crushed pineapple, drained
- 1/2 c. flaked coconut
Directions

1Sift together the dry ingredients.

2Mix eggs, oil, and sugar. Add dry ingredients a little at a time and beat well after each addition.

3Fold in carrots, pineapple, and nuts.

4Bake at 350 degrees in three 9 inch cake pans.
