  • 2 c. flour
  • 2 c. sugar
  • 1 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • pinch of salt
  • 1 c. chopped walnuts
  • 3 c. grated carrots
  • 4 eggs
  • 1 1/4 c. cooking oil
  • 8 oz. cream cheese
  • 1 stick oleo
  • 1 box powdered sugar
  • 2 tsp. vanilla

Directions

    Blend oil and sugar together.

    Add carrots and eggs.

    Mix well.

    Add flour, baking soda, baking powder, cinnamon and salt. Add nuts last.

    Put into greased and floured 9 x 13-inch pan. Bake at 350° for 35 minutes or until toothpick comes out dry. Cool.
