- 1 1/2 c. vegetable oil
- 2 c. sugar
- 4 eggs
- 2 c. flour
- 1 tsp. salt
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 3 c. grated carrots
- 1/2 c. chopped nuts
Directions

1Mix together oil and sugar.

2Add eggs.

3Sift dry ingredients. Blend into first mixture.

4Add carrots and nuts.

5Grease and flour 2 (10-inch) pans.

6Bake at 350° for 25 to 30 minutes.

7When cool, ice with cream cheese frosting.
