  • 2 c. plain flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 c. chopped pecans
  • 2 c. grated carrots
  • 1 small can crushed pineapple, drained
  • 1 tsp. salt
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 4 eggs

    Blend oil and sugar.

    Add eggs, one at a time (beat well after each addition).

    Sift dry ingredients; add mixture.

    Add nuts, pineapple and carrots last.

    Bake in 3 layer pans at 350° for 10 minutes.

    Reduce heat to 325° for 30 to 35 minutes.
