- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 c. chopped pecans
- 2 c. grated carrots
- 1 small can crushed pineapple, drained
- 1 tsp. salt
- 1 1/2 c. salad oil
- 2 c. sugar
- 4 eggs
Directions

1Blend oil and sugar.

2Add eggs, one at a time (beat well after each addition).

3Sift dry ingredients; add mixture.

4Add nuts, pineapple and carrots last.

5Bake in 3 layer pans at 350° for 10 minutes.

6Reduce heat to 325° for 30 to 35 minutes.
