- 2 tsp. cinnamon

- 3 cups grated carrots

Directions

1Cream: oil, sugar and eggs together - Sift together flour, baking soda, cinnamon and salt.

2Add the sifted ingredients to the sugar mixture, then add carrots and chopped nuts.

3Bake at 325 degrees for 1 hour or until cake springs back when touched.
