  • 2 1/2 c. flour
  • 2 c. sugar
  • 1 1/4 c. oil
  • 1 tsp. salt
  • 3 c. grated carrots
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 4 eggs
  • 1/2 c. chopped walnuts

Directions

    Add all ingredients in a large mixing bowl and beat thoroughly.

    Pour into a greased and floured Bundt pan or 13 x 9-inch pan.

    Bake in a preheated oven at 350° for 35 to 40 minutes or until a toothpick comes out clean.

    When the cake is cool, remove it from the pan.

    Prepare cream cheese frosting.
