  • 4 eggs
  • 2 c. flour
  • 2 tsp. cinnamon
  • 1 1/4 c. oil
  • 3 c. grated carrots
  • 2 c. sugar
  • 2 tsp. soda
  • 1/4 tsp. salt
  • 1 large cream cheese
  • 1 stick (1/4 lb.) butter
  • 3/4 lb. powdered sugar
  • 3/4 c. chopped walnuts

    Beat eggs; add sugar and beat well.

    Add oil and carrots and beat.

    Sift together the flour, soda, cinnamon and salt.

    Add to mixture and beat well.

    Pour into 9 x 13-inch or 3 layer cake pans.

    Bake at 325° for 40 to 50 minutes for 9 x 13-inch and 30 to 35 minutes for layer cake pans.
