- 2 tsp. cinnamon
- 1 1/4 c. oil
- 3 c. grated carrots
- 2 c. sugar
- 2 tsp. soda
- 1/4 tsp. salt
- 1 large cream cheese
- 1 stick (1/4 lb.) butter
- 3/4 lb. powdered sugar
- 3/4 c. chopped walnuts
Directions

1Beat eggs; add sugar and beat well.

2Add oil and carrots and beat.

3Sift together the flour, soda, cinnamon and salt.

4Add to mixture and beat well.

5Pour into 9 x 13-inch or 3 layer cake pans.

6Bake at 325° for 40 to 50 minutes for 9 x 13-inch and 30 to 35 minutes for layer cake pans.
