  • 2 c. sugar
  • 1 1/2 c. oil
  • 3 c. grated carrots
  • 2 c. flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • pecans or walnuts

Directions

    Mix eggs, sugar and oil together.

    Add dry ingredients.

    Mix together. Add carrots and nuts. Bake at 300° for 35 to 45 minutes in a greased 10 x 13-inch pan or 3 layers.
