Carrot Cake

  • 2 c. self-rising flour
  • 2 c. sugar
  • 4 eggs
  • 2 tsp. cinnamon
  • 1 1/2 c. Wesson oil
  • 2 small jars strained carrots (baby food)
  • 1 c. chopped nuts

Directions

    Mix all dry ingredients. Add oil. Stir well and add eggs. Add carrots and lastly the nuts. Grease and flour three 8 or 9-inch cake pans. Bake at 325° to 350° for about 40 minutes. (Batter may seem a little thin, but will be OK.)
