  • 2 c. flour
  • 1 tsp. baking soda
  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 3 c. grated carrots
  • 1 c. chopped nuts
  • 1 c. shredded coconut

Directions

    Mix all dry ingredients.

    Add oil; blend.

    Add eggs, one at a time; beat after each addition.

    Add carrots, nuts and coconut. Grease and flour cake pan and bake at 350° for 50 to 60 minutes.
