- 1 1/2 c. vegetable oil (canola)
- 2 c. sugar
- 5 eggs
- 2 c. plain flour
- 2 heaping tsp. baking powder
- 2 tsp. vanilla
- 1 scant tsp. soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 c. grated carrots
- 1 small can crushed pineapple, drained
Directions

1Preheat oven to 325°.

2Prepare three 9-inch cake pans.

3Mix oil, sugar and eggs in a large mixing bowl and beat well.

4Sift dry ingredients together, then mix in a little at a time.

5Add vanilla.

6Add grated carrots and crushed pineapple.

7Put batter into the three cake pans and bake for 30 to 40 minutes until cake tests done.

8Cool layers.

9While baking and cooling, make the frosting.

10Then stack layers with it.

11For an extra touch, grated nuts can be sprinkled between layers and on top.
