  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 4 eggs, beaten until fluffy
  • 2 jars junior size baby food carrots (15 oz. total)
  • 3 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 c. chopped walnuts

Directions

    Mix oil, sugar, eggs and carrots, then add flour, baking soda and cinnamon.

    Add nuts.

    Bake in floured tube pan at 350° for 1 hour.
