  • 3 c. grated carrots
  • 4 eggs, beaten
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. nutmeg
  • 1 c. pecans (optional)
  • 2 c. sugar
  • 1 1/2 c. oil
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/4 tsp. salt (optional)

Directions

    Mix sugar, eggs and oil.

    Add dry ingredients and mix well. Fold in carrots and pecans.

    Bake in 10-inch greased and floured tube pan at 325° for 1 hour.

    Cool for 1 hour.
