- 3 c. grated carrots
- 4 eggs, beaten
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. nutmeg
- 1 c. pecans (optional)
- 2 c. sugar
- 1 1/2 c. oil
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/4 tsp. salt (optional)
Directions

1Mix sugar, eggs and oil.

2Add dry ingredients and mix well. Fold in carrots and pecans.

3Bake in 10-inch greased and floured tube pan at 325° for 1 hour.

4Cool for 1 hour.

5Ice cake.
