- 3 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup oil
- 1 cup sugar
- 3 cups peeled and shredded carrots
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 cup apple sauce
- 1 cup light brown sugar
- 3 eggs
Directions

1Preheat oven to 350 degrees.

2Grease and flour a tube cake pan. In a medium bowl, combine flour, baking powder, soda and salt.

3Set aside.

4In a large bowl, beat together applesauce, oil sugars and eggs.

5Blend in flour, beating until smooth.

6Stir in carrots. Pour into prepared pan and bake for 60-65 minutes or until done. Remove cake from pan.

7Cool completely.

8Glaze cake if desired. Serves 24.
