  • 2 c. cake flour
  • 1 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. vegetable oil
  • 4 eggs
  • 3 c. shredded carrots
  • 1 (8 oz.) can crushed pineapple, drained
  • 1/2 c. raisins
  • 1 tsp. vanilla

Directions

    Combine flour, sugar, soda, salt, cinnamon and oil.

    Beat in eggs, one at a time.

    Add carrots and vanilla.

    Pour into two greased 9-inch layer pans.

    Bake at 375° for 30 minutes, or until toothpick inserted comes out clean.

    Cool and frost.
