- 1 c. chopped nuts
- 2 c. sugar
- 1 c. vegetable oil
- 4 eggs
- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 2 tsp. vanilla
Directions

1Cream sugar, vegetable oil and eggs. Add vanilla. Mix in flour and spices. Add carrots and nuts. Place in greased and floured pan. Bake at 325° for 45 minutes. Frost with cream cheese frosting.
