  • 3 c. grated carrots
  • 1 c. chopped nuts
  • 2 c. sugar
  • 1 c. vegetable oil
  • 4 eggs
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 tsp. nutmeg
  • 2 tsp. vanilla

Directions

    Cream sugar, vegetable oil and eggs. Add vanilla. Mix in flour and spices. Add carrots and nuts. Place in greased and floured pan. Bake at 325° for 45 minutes. Frost with cream cheese frosting.
