- 2 c. sugar
- 1 1/4 c. Crisco oil
- 4 eggs
- 2 1/4 c. sifted flour
- 2 tsp. salt
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 3 c. grated carrots
- 1 1/2 c. coarsely chopped walnuts
Directions

1Combine sugar, Crisco oil and eggs.

2Beat at medium speed for 2 minutes.

3Sift dry ingredients 2 to 3 times.

4Add to egg mixture and beat 1 to 2 minutes.

5Add grated carrots; beat 1 minute. Spread in a greased and floured pan, 13 x 9 x 2-inch.

6Bake at 300° for 1 hour.

7Frost with Cream Cheese Frosting (recipe follows).
