- 4 medium carrots
- 1 c. flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. Crisco
- 2 eggs
- 1/4 c. chopped pecans
- Cream Cheese Frosting
Directions

1Chop carrots.

2In mixing bowl combine flour, sugar, baking powder, baking soda, salt and cinnamon.

3Add Crisco, eggs and carrots.

4Mix until moistened.

5Beat with electric mixer for 2 minutes.

6Spread evenly in greased and floured 9 x 9 x 2-inch baking pan.

7Bake for 35 minutes at 325°.

8Cool.
