  • 2 c. plain flour
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon
  • 1 1/2 c. oil (vegetable)
  • 4 eggs
  • 3 c. shredded carrots

Directions

    Measure flour; add salt, baking soda, cinnamon and set aside. Mix sugar and eggs (1 at a time); add oil.

    Mixer on low speed; add dry ingredient and mix.

    Add carrots.

    Bake at 350° for 19 to 23 minutes depending on your oven.

    Cool completely.
