  • 2 c. sugar
  • 4 eggs
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 c. cut up nut meats
  • 1/2 c. cooking oil
  • 2 1/4 c. flour
  • 2 tsp. cinnamon
  • 3 c. grated raw carrots

    In a bowl, mix sugar and oil well together.

    Add eggs, one at a time, beating well after each egg.

    Mix in dry ingredients, starting with flour.

    Mix well.

    Add carrots and nuts.

    Pour into greased and floured 9 x 13-inch cake pan.

    Bake at 350° for 40 minutes. Cool. Frost with Cream Cheese Frosting.
