- 2 c. flour
- 2 c. sugar
- 1/2 tsp. salt
- 1 tsp. soda
- 2 tsp. cinnamon
- 3 eggs
- 1 1/2 c. oil
- 2 c. grated carrots
- 1 tsp. vanilla
- 1 c. crushed pineapple, well drained
- 1 c. shredded coconut
- 1 c. chopped walnuts
Directions

1In a large bowl, mix all the dry ingredients.

2Add eggs, oil, carrots and vanilla.

3Stir in the pineapple, coconut and 1/2 cup nuts.

4Bake in a greased and floured 13 x 9-inch pan at 350° for 50 to 60 minutes.
