  • 2 c. flour
  • 2 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 2 tsp. cinnamon
  • 3 eggs
  • 1 1/2 c. oil
  • 2 c. grated carrots
  • 1 tsp. vanilla
  • 1 c. crushed pineapple, well drained
  • 1 c. shredded coconut
  • 1 c. chopped walnuts

Directions

    In a large bowl, mix all the dry ingredients.

    Add eggs, oil, carrots and vanilla.

    Stir in the pineapple, coconut and 1/2 cup nuts.

    Bake in a greased and floured 13 x 9-inch pan at 350° for 50 to 60 minutes.
