Ingredients
- 2 c. all-purpose flour
- 2 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 3 c. finely shredded carrots
- 1 c. cooking oil (may substitute applesauce)
- 4 eggs
- 1 (8 1/4 oz.) can undrained, crushed pineapple
- 1/2 c. coconut
- 1/2 c. raisins
- 1/2 c. chopped nuts
Directions

1In a bowl, combine flour, sugar, baking powder, baking soda and cinnamon. Add carrots, oil and eggs. Beat with electric mixer until combined. Add pineapple, coconut, raisins and nuts.

2Mix by hand. Pour into a 9 x 13-inch dish and bake at 350° for 40 minutes.

3When cooled, frost with cream cheese frosting.
