  • 1 1/4 c. flour
  • 1 1/4 c. sugar
  • 1/2 tsp. cinnamon
  • 3/4 c. Wesson oil
  • 2 eggs
  • 3/4 c. pecans, chopped
  • 1 1/2 c. grated carrots
  • 1 stick butter
  • 8 oz. cream cheese
  • 1 box powdered sugar

Directions

    Combine dry ingredients.

    Add Wesson oil and beat until smooth.

    Add eggs and beat after each one.

    Add carrots and nuts and beat.

    Pour into 2 (9-inch) pans and bake at 350° until done. (Cook about 50 minutes.)
