  • 5 large eggs
  • 3 c. sugar
  • 1 c. buttermilk
  • 1 Tbsp. vanilla
  • 3 c. flour
  • 1 Tbsp. baking soda
  • 1 Tbsp. cinnamon
  • 1/2 tsp. salt
  • 3 c. carrots, shredded
  • 1 can pineapple, drained
  • 1 1/2 c. walnut pieces
  • 5 oz. sweetened coconut (flaked)

Directions

    Heat oven to 325°.

    Grease a 13 x 9-inch baking pan.

    Beat together eggs, sugar, oil, buttermilk and vanilla on low speed. Beat in flour, baking soda, cinnamon and salt.

    Stir in remaining ingredients.

    Pour into pan.

    Bake 1 hour or until a pick inserted in middle comes out clean.
