- 5 large eggs
- 3 c. sugar
- 1 c. buttermilk
- 1 Tbsp. vanilla
- 3 c. flour
- 1 Tbsp. baking soda
- 1 Tbsp. cinnamon
- 1/2 tsp. salt
- 3 c. carrots, shredded
- 1 can pineapple, drained
- 1 1/2 c. walnut pieces
- 5 oz. sweetened coconut (flaked)
Directions

1Heat oven to 325°.

2Grease a 13 x 9-inch baking pan.

3Beat together eggs, sugar, oil, buttermilk and vanilla on low speed. Beat in flour, baking soda, cinnamon and salt.

4Stir in remaining ingredients.

5Pour into pan.

6Bake 1 hour or until a pick inserted in middle comes out clean.
