Ingredients

  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 4 eggs
  • 2 c. sifted flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 2 to 3 c. carrot baby food
  • 1/2 c. margarine
  • 1 (8 oz.) pkg. cream cheese
  • 1 box 4x confectioners sugar
  • 1 tsp. vanilla
  • 1 c. chopped pecans

Directions

    Mix salad oil and sugar.

    Add the eggs, one at a time, beating after each addition.

    Gradually add dry ingredients (flour, baking powder, soda, cinnamon and salt).

    Add carrot baby food and mix well.

    Pour into 2 greased and floured pans and bake at 350° until done, approximately 30 minutes. Remove from pans and cool completely.
