- 1 1/2 c. vegetable oil
- 3 c. sugar
- 3 eggs
- 2 tsp. vanilla
- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 2 tsp. baking soda
- 3 c. flour
- 1 (8 oz.) can crushed pineapple with juice
- 2 c. grated carrots
Directions

1Mix oil and sugar.

2Add eggs, vanilla, salt, cinnamon, baking soda and flour.

3Mix well.

4Add pineapple with juice.

5Stir until combined.

6Fold in carrots.

7Pour into greased and floured 9 x 13-inch pan.

8Bake at 350° for 60 minutes.
