  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 2 tsp. cinnamon
  • 3 eggs
  • 1 1/4 c. oil
  • 2 c. grated carrots*
  • 1 c. raisins*
  • 1/2 c. walnuts*

Directions

    Mix dry ingredients.

    Add eggs, oil and vanilla and mix thoroughly.

    Blend in carrots, raisins and nuts, mixing well after each.

    Bake in round pan or 2 loaf pans for 1 hour at 350°.
