Ingredients

  • 1 1/2 c. corn oil
  • 2 c. sugar
  • 3 eggs
  • 2 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 1/2 c. coconut (flaked)
  • 2 c. shredded carrots
  • 1/2 c. chopped nuts
  • 1 small (8 1/2 oz.) can crushed pineapple (undrained)

Directions

    Combine corn oil and sugar and beat with a beater.

    Combine remaining ingredients in a large bowl and mix by hand using a wooden spoon, stirring well after each addition.

    When all ingredients have been added and mixed well, pour into a greased 9 x 13-inch loaf pan and bake at 350° for 40 minutes.
