- 1 1/2 c. corn oil
- 2 c. sugar
- 3 eggs
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. vanilla
- 1 tsp. salt
- 1/2 c. coconut (flaked)
- 2 c. shredded carrots
- 1/2 c. chopped nuts
- 1 small (8 1/2 oz.) can crushed pineapple (undrained)
Directions

1Combine corn oil and sugar and beat with a beater.

2Combine remaining ingredients in a large bowl and mix by hand using a wooden spoon, stirring well after each addition.

3When all ingredients have been added and mixed well, pour into a greased 9 x 13-inch loaf pan and bake at 350° for 40 minutes.
