- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 medium can crushed pineapple
- 1 c. coconut
- 2 tsp. vanilla
- 2 c. grated carrots
- 2 c. walnuts
Directions

1Cream together oil, sugar and eggs; add dry ingredients.

2Add carrots and nuts; add vanilla and mix well with mixer.

3Pour into greased funnel cake pan.

4Bake at 350° for 45 minutes or until done.
