  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 1/2 tsp. cinnamon
  • 4 eggs
  • 1 1/2 c. cooked, shredded carrots
  • 2 c. flour
  • 2 tsp. soda (baking)
  • 1 tsp. salt

Directions

    Preheat oven to 350°. Mix sugar, oil, cinnamon, eggs and carrots, then add flour, soda and salt. Mix until well blended. Pour into greased and floured 13 x 9 x 2-inch pan and bake about 45 minutes or when toothpick inserted in center comes out clean. Cool completely, then frost it.
